This is not the recipe to decide to make if you are having one of those lazy days where it took a superhuman effort to wrest yourself from the bed. Save this recipe for when you are feeling ambitious, had your Wheaties and decide to conquer the kitchen as well as the world. This is a super healthy do-it-yourself pasta sauce. It is a lot harder than just dumping a can of heated tomato sauce over pasta but the end result is well worth the effort! Tons of veggies and you won’t miss the generic supermarket sauce, I promise.
Now, the original recipe says that prep takes 15 minutes. I’m calling BS on this one! The only way this recipe would take you fifteen minutes to prepare was if you were the Flash! For the rest of us normal plebeians, you are looking at closer to double that time. But remember, even if it feels like it is taking you a millennia to chop and slice everything, if you speed up and lose a finger, a trip to the ER will quadruple your prep time. And by that point, let’s face it. you will probably have lost your appetite. Enjoy, Sporkers!
Crock-Pot Spaghetti Sauce
1 pound browned lean ground beef
2 cups sliced zucchini
2 cups chopped tomatoes
2 cups sliced green bell peppers
2 cups beef or vegetable broth
1 cup sliced red onion
1 cup sliced mushrooms (dealer’s choice on the type but feel free to use a mixture of brown and white)
1/2 cup tomato paste
1/2 cup sliced green onions
2 tablespoons minced garlic
2 tablespoons sea salt
1 tablespoon chopped parsley
This is actually the easiest part of this meal. The preparation of the ingredients is the time-consuming bit. Once you have everything ready all you need to do is stir the ingredients together in a Crock-Pot and cook on low for 8 hours. Serve your delicious sauce over any kind of pasta you choose. This recipe will make quite a bit of sauce, but this just happens to store very well so pop whatever you don’t eat into the freezer to enjoy at your leisure.
*Vegetarian option – remove all things meat related from the dish. But really, if you are hopping on the Meatless Monday bandwagon, this is a great option to try.
