Season 1 Episode 8 “Love and War and Snow”
About a year ago, I started rereading the Harry Potter series (for the thousandth time) and found myself shopping for more sweaters and blankets. A few years ago, I was more tolerant of the Kardashian clan than I am now and started filling in my already thick eyebrows with black pencil. I was also allowing a camera crew to follow me around more frequently.
Okay, that last sentence is a lie. But the media we are exposed to affects our daily habits in ways we don’t expect. My curiously dark and thick eyebrows were a testament to that.
A few months back, Netflix put up Gilmore Girls, and I, like thousands of fans, started re-watching the talkative mother-daughter duo interact, grow, and eat. Constantly eat. Eat everything in sight.
Those skinny bitches can eat!
And I, a non-skinny bitch, started getting hungry. I started craving breakfast danishes, lunchtime fries, and midnight pizza with everything on it. I even did it once or twice. I ate pizza at midnight and drank Pepto at 1 AM. I had a doughnut for breakfast and woke up with my head on my keyboard at work a few hours later. Needless to say, I’m no Gilmore.
Part of the Gilmore Girls experience, however, is giving into indulgence. The show is, after all, indulgent with its quirky and lovable town and too-good-to-be-true mother-daughter relationship.
In Season 1, Episode 8, Sookie bakes a batch of Rocky Road Cookies. Woah. That’s not a cookie you hear about often. By the end of the episode, I was still thinking about these cookies (I’m not proud of this) and I knew I had to to bake them.
Now, I’m not the biggest fan of marshmallows, which I already admitted to the world here. And yet, even I realized that Rocky Road Cookies without marshmallows would just be chocolate almond cookies, which are TOTALLY different things. I bought a bag, put on a Gilmore Girls episode, and started baking.
Gilmore Girls Rocky Road Cookies
2 cups dark chocolate chips, divided
8 tablespoons butter
1/2 cup flour
1/4 cup cocoa powder
1/4 teaspoon salt
1 teaspoon baking powder
2 large eggs
2/3 cup sugar
1 and 1/2 teaspoons vanilla extract
1/2 cup marshmallows
2 cups chopped almonds (the original said walnuts, but I’m used to almonds in my Rocky Road ice cream)
Melt 1 cup of the chocolate chips with the butter in a saucepan on very low heat, stirring constantly until smooth. Remove from the heat, and let cool to room temperature.
Preheat the oven to 325 degrees F and line cookie sheets with parchment paper.
Combine flour, cocoa, salt, and baking powder in a small bowl. In a large bowl, beat eggs, sugar and vanilla until thick and light yellow, which took me about 3 minutes. Stir the flour mixture, followed by the chocolate, into the egg mixture. Beat for 1 minute, until combined. Fold in the remaining chocolate chips, marshmallows, and almonds.
Warning: this dough will be runny! Do not feel compelled to add more flour to thicken this dough – it should have this consistency. Once I combined all my ingredients, I refrigerated my dough while I cleaned up to allow it to harden a little.
Drop a teaspoon of dough on the cookie sheets about 2 inches apart. These cookies spread far! Bake for 10 minutes.
Remove from oven and allow to cool for 5 minutes before snacking.
These cookies are CHOCOLATEY. Dark brown chocolate indulgence in every bite. They’re also probably the best cookies I’ve ever baked because every bite has a fun surprise in it. Will I get almond bits or sticky marshmallow or extra chocolate? They had me singing, “The cookies for the love and the Dean and the cookies for the love …”
