Eat Like a Gilmore Girl: Rory Pancakes

Breakfast is fuel for the day. It’s the most important meal of the day. The most! This is something the Gilmore girls take very seriously if “fuel” means “sugar” and “day” means “one hour.” To pay homage to this wise daily Gilmore ritual, I made Rory Pancakes.

Rory, the show’s quietly quippy lead, loves her daily pancakes at Luke’s full of chocolate chips and sugar. I decided to kick them up a diabetic notch and add ice cream, cereal (Rory also loves cereal), and whipped cream. Make these pancakes when you’re deep in need of a comfort-filled breakfast that can double as a sleeping pill and knock you straight out.

Rory Pancakes

Ingredients
1/2 cup pancake mix (I used Krusteaz)
1 teaspoon butter
1 tablespoon chocolate chips
1 scoop mocha ice cream (I used Ben and Jerry’s Coffee Coffee BuzzBuzzBuzz!)
Liberal sprinkling of cereal (I used Cinnamon Toast Crunch)
Healthy squirt of whipped cream

Instructions
Add cold water in slow stream to pancake mix, stirring constantly, until batter is thick, but pourable. Add chocolate chips.

Heat butter in pan. Make pancakes according to box directions. You should end up with two.

Stack pancakes on plate. Top with ice cream, cereal, and whipped cream. Enjoy.

 

This is by far the easiest recipe I have ever submitted because that is the Rory way. Why make pancakes from scratch when you can use a box? Why add fruit to a breakfast pancake when you can add sugary cereal? Mocha ice cream was an obvious choice because of the Gilmore coffee addiction. The pancakes taste the way you’d expect them to – like Halloween on a plate. Now I must go nap off my sugar crash.
