The weather right now is such a tease! One minute it is a balmy 68 degrees and I am considering putting away all of my sweaters and snow boots but then the very next day it looks like Antarctica. Well, I for one am sick of this! I refuse to submit to the weather. I want summer! I want to wear shorts! I want to grill! So, I will.
Okay, tantrum over. Here is a great recipe that will make you feel like it is summer, even if you have to stand out by the grill in your parka and snow boots to make it happen!
Grilled Pork Chops with Sautéed Mushrooms
Boneless pork chops
Tastefully Simple Ultimate Steak Seasoning (Yes, I know we are making pork but trust me on this! This is a one size fits all seasoning. I have had it on chicken, steak, pork. All amazing!)
Defrost the pork chops. This can be done in many ways, so it’s really dealer’s choice. You can defrost them in the microwave, in hot water, or if you are a planner, simply move them from the freezer to the fridge the night before you are ready to cook.
Sprinkle the pork chops with Tastefully Simple seasoning and a little Liquid Smoke for extra flavor.
Turn the grill on high. The size/thickness of the cut you choose will affect how long they need to be cooked. Anywhere from 3-6 minutes each side. Trust your instincts! If they’re burning take them off, if they are still pink in the middle let them linger awhile longer. You do not want undercooked pork chops!
To check the meat, cut a slice into the center and see what color it is. Total cook time for the pork chops should be about 10-15 minutes. Plenty of time to ready the shrooms!
While the pork chops are on the grill go ahead and start the mushrooms.
Sauté the mushrooms with a tablespoon of olive oil on medium to high heat.
Once the mushrooms start to brown, sprinkle evenly with onion salt and garlic powder. A little seasoning goes a long way, so don’t feel like you have to go overboard.
Add a teaspoon of Liquid Smoke to the mushrooms and stir. Keep the mushrooms moving so they don’t stick to the skillet.
You are ready to feast! Add a salad and steamed asparagus to get some veggies into the meal. Enjoy your little taste of pre-summer summer food, Sporkers!
