Herb and Lemon Buttered Popcorn

It’s time for a tiny golden man strategically holding a sword-thing to be handed out to the beautiful people of the silver screen. And since the Oscars is all about the movies and its stars, what better treat to eat than the food we gorge on while AT the movies! (Yes, there are places to watch movies aside from the streaming service).

Microwave popcorn is fine and good – and I definitely bought some as a backup – but I decided to my hand at a popcorn recipe that ventured more onto the savor than sweet side: Herb and Lemon Buttered Popcorn.

Herb and Lemon Buttered Popcorn

Ingredients
1/4 cup olive oil
3/4 cup popcorn kernels
6 tablespoons butter
2 teaspoons freshly squeezed lemon
zest of 1 lemon
1/2 teaspoon coarsely ground black pepper
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried tarragon
1/2 teaspoon dried thyme
1 teaspoon red pepper flakes
1/3 cup sliced almond
parchment paper

Instructions
In a large pan with a lid, heat olive oil and 3 kernels on medium heat. After they pop, add the rest of the kernels and cover with lid.

Preheat the oven to 300°F degrees.

Remember you might need to shake the pan occasionally.

Turn off the heat and move the popcorn aside after the kernels are done popping. Usually they’re about done once you only hear popping once every five seconds or so.

Pour the popcorn into a large bowl.

Get out a baking sheet and line it with parchment paper. Set it aside, for now.

Melt the butter in a small frying pan on medium heat. Once it’s a goldeny color, pour it into the bowl.

Add the lemon juice and zest (to get zest, just grate the lemon), the pepper, salt, and spices to the melted butter.

Drizzle the mixture over the popcorn in the bowl (you might want to mix it. Using your hand is easiest).

Add the almonds and, again, mix it all together. This is also a good time to taste-test and see if you need to add any more seasoning.

Put the popcorn onto the baking sheet and bake the popcorn (while also toasting the almonds) for about 6-8 minutes.

Take it out of the oven and put into a large bowl. Now it’s time to eat and enjoy watching actors get played off the stage for overly long speeches.

*This recipe makes one large bowl. I cut the recipe in half since I was making a smaller batch. Also, the original recipe suggests adding 2-3 tbsp of grated Parmesan cheese to the butter mixture
