Good day loyal readers! I feel kinda bad that I made you work so hard and put off your alcoholic revelry last week to make homemade enchiladas. Admittedly, and I think you will agree, the end result was well worth it. However, this week I think you deserve a reprieve. I present to you my go-to, super easy, practically gourmet meal! Easy, yes, but not impossible to screw up. Don’t use disposable baking sheets and don’t try to drain excess grease over the sink. Gravity is not your ally! You will lose your dinner to the sink god. Not that I speak from personal experience or anything. Cough.

This delightful chicken dish is simple to make, and also relatively healthy. This is the perfect solution if you find the day has gotten away from you and that grocery store trip just did not happen. Instead of despairing in front of your barren landscape of a fridge and scraping mold off ancient pizza, pull out this handy dandy recipe!

This meal requires only three ingredients, most of which probably occupy your fridge already. These are staples with multiple uses that you can buy in bulk, and they have shelf lives longer than most of us would care to imagine. And almost everyone has that bag of bulk frozen chicken they bought simply because it was on sale. Use these to make a great meal in less than a thirty minutes, start to finish! Parmesan Chicken

Ingredients
4 boneless chicken breasts
2-3 tablespoons mayonnaise
1/4 cup shredded parmesan cheese (or more)

Instructions
Thaw the chicken breasts. You can do this the all-natural way, aka have your crap together and leave them to thaw all day so they are ready when it is time to make dinner. Or, the far more plausible scenario, decide to make this meal last minute and pop those babies in the microwave.

Preheat the oven to 400 degrees.

Mix the mayo and the shredded parmesan cheese together in a bowl.

Put chicken on tin foil covered baking sheet.

Spread the mixture evenly over the chicken.

Bake for 20 minutes until chicken is cooked through and is covered with a nice golden brown blanket of cheesy and mayo-y goodness (mayo-y is totally a word, loyal readers…maybe).
