I have a new favorite veggie and I have to warn everyone, I have been going a little crazy with finding and testing a ton of amazing recipes to use it with. So far no desserts, but give me time. Pretty soon you will all be avidly reading about how to make zucchini ice cream! But for now, let’s just talk snacking.

Zucchini is a healthy but mild-tasting veggie that can be added to almost any meal. For a great snack, however, simply add some cheese and spices and suddenly this mild-mannered veggie transforms and suddenly jumps to a wow category! And yet…they are an excellent snack that you don’t have to feel guilty about eating.

This particular recipe is for zucchini sticks. Now, I know what you are thinking. This is just another feeble attempt by those granola eating health nuts to try and trick you into thinking that “this tastes just like eating bread sticks but is super healthy!” Let me dispel you of that notion right here and now. No one in their right mind would mistake these for breadsticks. They taste nothing like bread and will not replace them but do potentially deserve a place on your menu.

Few ingredients make this an easy addition to any meal, fancy or simple. I will warn you that they are not good cold. You don’t have to stuff them all down right away but I would suggest popping any leftover veggie bites in the microwave for 20-30 seconds before chowing down.

Thus begins what is sure to be an intriguing foray into the many uses of zucchini. Stay tuned, Sporkers…

Zucchini Sticks

Ingredients
3 small zucchini
1/2 cup fresh shredded parmesan cheese
1/4 tablespoon oregano
1/8 teaspoon salt
1/4 teaspoon black pepper
olive oil

Directions

Preheat oven to 350 degrees.

Combine parmesan, oregano, salt and black pepper together in a small mixing bowl.

Cut the zucchini in half lengthwise and then quarter those pieces.

Line a baking sheet with parchment paper and lightly spray with olive oil.

Arrange zucchini spaced evenly on the parchment paper.

Sprinkle the spice and cheese mixture over the zucchini.

Bake for 15 minutes then broil for an additional 4 minutes to achieve a crispy and gooey crust.
