The best thing about Friday is that it can be anything you want it to be. Once you finally dispense with the necessary obligations (work, class, crimefighting) of this “weekday,” several hours stretch before you, promising shenanigans, and adventures worthy of a Greek myth.
So what do you eat on this most portentous of days? Our Mexican cheeseball, that’s what. Because it can be anything you want it to be too. This cheeseball would be just as happy garnishing a casual hangout as taking the sidecar of your motorcycle as you rumble down the highway toward uncertain danger. The spices are an adventure and the cheese is like coming home. So what are you waiting for? Trust us, this is what you’ve been daydreaming about all week.
Silver Spork Friday Cheeseball
1 package (8 oz.) cream cheese, softened
1 cup shredded pepper jack cheese
1 cup shredded sharp cheddar cheese
2 tablespoons finely chopped red peppers
2 tablespoons chopped fresh cilantro
2 green onions, finely chopped
1 teaspoon hot pepper sauce
1 teaspoon lime zest
1/4 teaspoon chili powder
½ cup crackers or tortilla chips, finely crushed
1.Beat cream cheese and shredded cheeses in medium bowl with mixer until well blended.
2. Add all remaining ingredients except cracker crumbs and mix well. Shape into ball. Refrigerate for 1 hour.
3. Roll in crumbs. Serve with additional crackers or bring along on your journey toward awesomeness.
