So you saw Big Hero Six and absolutely fell in love with Baymax? Well so did everyone else who saw it, especially us here at Silver Spork. The movie gave us all the feels and it was beautiful. Blalalalala. If that statement doesn’t make sense to you, start looking up your nearest theater.

There were tons of great quotes:

“Baking cupcakes makes Baymax a better care provider.”

“It’s okay to make cream cheese frosting. Cream cheese frosting is a natural response to pain.”

“On a scale of 1 to 10, how would you rate this recipe?”

Okay, maybe they aren’t direct quotes, but that doesn’t stop these delicious, little Baymaxs from being easy to make and fun to eat. They may not be good for your physical health but they are definitely good for your emotional health.

Big Hero 6 Cupcakes

1 box of cake mix (Duncan Hines dark chocolate & red velvet)
1 can of soda (Coca Cola or Sprite)
18 cupcake liners
8 ounces of cream cheese (Tofutti dairy free cream cheese)
1 cup of powdered sugar
1/4 cup of butter (Earth Balance soy-free)
1/2 teaspoon vanilla extract
A few drops of butter flavor
Marshmallows (Dandies)
1 tube of black gel icing

We used the brands in parentheses.


Before starting, take out the cream cheese and butter so it can get to room temperature.

Preheat the oven to 350 degrees. While that’s heating, using a mixer, blend the dry cake mix and the can of soda. Mix the can in slowly, you will need at least one cup of soda but you possibly could use the whole can. You want the mixture to be pudding-like. Beat together for about two minutes and be sure all the chunks of cake mix are gone.

Place your cupcake liners into the cupcake tray. The recipe will make about 18 cupcakes. Fill the liners a little over half way with batter. Place in oven for 20 minutes, check with toothpick, then add time as necessary. Depending on your oven it could take them up to 35 minutes to bake all the way. Turn the oven off and crack the door open. Let the cupcakes cool with the oven, this keeps them from falling in the center.

While the oven and cupcakes are cooling you can start on the frosting. Using the mixer, combine the cream cheese and butter. Once that is well blended add in the vanilla and butter flavor. Next, slowly add in the powdered sugar. Beat everything together until the mixture becomes creamy. Transfer your yummy cream cheese frosting into a plastic zip-lock bag or a frosting bag.

Place the cupcakes and icing in the fridge in the fridge for a couple hours or overnight. Once the frosting has thickened and the cupcakes are totally cool, they are ready.

Using the artistic talent in your heart, frost the cupcakes. We believe in you. Just before you’re ready to serve them, decorate the marshmallows with a Baymax face, and place them on top of the frosting. While decorating, we found a toothpick helpful to make the line between his eyes. If you do this step the day before serving the marshmallows will melt into the frosting, creating a Baymax that needs a recharge.
