Quiche in a Mug


I’m proud to announce that I’ve perfected the art of cooking in the microwave. A box of Mac & Cheese? No problem. Frozen pizza? Eggs? Cake? Pass me the hot pads!

Like many of you Sporkers, I wake up before the sun and get home long after it’s set. So the last thing on my mind is cooking an elaborate meal for myself.
The one thing I do make time for is coffee. Three cups a day. Minimum. Coffee mugs clutter my house and travel mugs pile up in my car. (I’m even a Starbucks Gold Card member, but I don’t want to brag.)
Coffee mugs are so handy. They have a nice handle that perfectly fits my hand. They are microwave and dishwasher safe. What else could I need in a piece of dish-ware? Well, did you know that you can cook in a coffee mug? We did. 
Blasphemy! That’s what I thought at first, until I realized how delicious things taste in a coffee mug.
Eggs in a microwave always have that slimy, crispy feeling to them. But I found a recipe for a quiche in a coffee mug. And it tastes almost as good as a baked quiche, but it’s ready in minutes.
Grab your chef’s hat and get cooking.

Quiche in a Mug 

1 egg
1 and 1/2 tablespoons milk
1/4 of a bagel (or that amount of french bread)
2 teaspoons cream cheese
1/2 slice prosciutto or ham
fresh thyme OR chopped chives
Dijon mustard
ground black pepper
In your coffee mug, beat egg and milk together with fork. Add salt and pepper to personal preference.
Tear bread and prosciutto into pieces.
Add bread to your egg mixture, then stir in cream cheese. Add prosciutto and sprinkle thyme over the top.
Microwave on high for 1 minute. Garnish with mustard.
