Breakfast is the most important meal of the day. And it’s also my favorite. If I’m eating lunch or dinner somewhere that serves breakfast, I know what I’m getting. I’ve only ever had Bruegger’s Bagels breakfast sandwiches, regardless of how many people say their other sandwiches are delicious.
So I wanted to find an easy (and acceptable) way to serve my family breakfast for dinner. Lots of pinning later, I found this simple recipe for a delicious Breakfast Ring. A warm, doughy dinner casserole filled with breakfasty goodness. I made it with bacon, but you could easily substitute spicy sausage to give it a little kick. I also recommend serving it with salsa for extra flavor.
1 can Pillsbury large crescent rolls
1/3 cup milk & 1 tablespoon milk
4 slices bacon
1 cup shredded cheese (I used sharp cheddar)
Pre-heat over to 375 degrees F. Line a cookie sheet with parchment paper.
In a skillet, cook bacon over medium heat until cooked but not crispy. If they are crispy, they will crumble when you put the ring together. Drain the skillet and set bacon aside.
In a bowl beat together eggs and 1/3 cup milk. Scramble your eggs on the stove.
Unroll the crescent dough. On your cookie sheet, arrange the triangle pieces of dough into a star-like shape, with the short ends meeting in the center and the points pointing out. Make sure you leave a 4-inch circle open in the center.
Cut your strips of bacon in half length-wise. Place a strip of bacon on the center of each triangle. Sprinkle the wider of your triangles with 1/3 cup cheese. Then add your eggs, and top with another 1/3 cup of your cheese.
Pull the points of your triangle over the eggs and cheese, sticking the dough together. This forms your breakfast ring.
Brush the dough with your tablespoon of milk and sprinkle with remaining cheese.
Bake for 20 to 25 minutes, until the crescent dough turns a deep golden brown. Let cool and serve with salsa.
