Italian Sausage Sandwiches


This time of year it seems like everyone at work is on a diet! They went ape-shit on the Easter goodies and now are doing the walk of shame with their kale smoothie mustaches. But every diet has a cheat day. This is what you look forward to all week while you choke down kefir, tofu and celery smoothie. So you have to make it count! Don’t waste your cheat day on something lame. The memory of this meal must feed your imagination through all the hardship of the week ahead. Don’t worry Sporkers, I have a suggestion.

Italian sausage sandwiches are the remedy to cure all ills.They don’t involve too much prep and rival anything you would find at a restaurant. And despite feeling like the ultimate foray into decadence, these are actually not that bad for you. The ingredients themselves are pretty healthy. You have spicy sausage, peppers, spaghetti sauce, cheese, and bread. And it’s not deep-fried in Crisco and smeared with bacon fat and sprinkled with powdered sugar. Also, peppers have Vitamin C! Can you feel the healthy? Oh, I can feel it.

Italian Sausage Sandwiches

Fresh hoagie rolls
Ragù Garden Style Spaghetti Sauce
Sliced bell peppers – red and green
Mozzarella cheese – shredded
2 tablespoons olive oil
Spicy Italian sausage- I buy the bulk sausage from Boulder Sausage Company from Sprouts rather than the somewhat dubious plastic tubing mass produced by corporate goliaths. Get off your high horse! Okay, sorry. Geez!

Thoroughly fry the sausage in a medium sized skillet. Mind the heat because fat tends to mimic pop rocks with its penchant for grease splatter. And excess clean up takes some of the enjoyment out of meals.

Using a wooden spoon, chop the sausage into desired sized bits. Heh! 😉

While the sausage is cooking…

Cut the hoagie rolls in half. This is an open faced sandwich, because who needs to fill up on bread carbs when there are French fries to enjoy later!

Preheat the oven to broil at 500 degrees.

Sauté the bell peppers in olive oil.

Once the sausage is completely cooked, dab up the excess oil with a paper towel.

Spread the Ragù evenly over the hoagie rolls.

Add the sausage, peppers, and mozzarella cheese to the rolls.

Place the sandwiches on a baking sheet covered with tin foil to avoid potential dripping.

Broil for a couple of minutes or until the cheese has melted. Watch this like a hawk! Broiling is tricky business.

Bask in your cheat day and serve with French fries and your favorite wine/beer!
