Breakfast Banana Split

split

I had an epiphany the other day about my contributions to this illustrious publication. Namely the fact that I have completely ignored a meal. Of all the articles I have written, none have been about breakfast! A majority might have been about alcohol…no judgment!

Time to correct this oversight right now! Breakfast is the most important meal of the day after all. At least according to the milk and yogurt lobbyists! *Suspicious eyes* I will admit though that due to poor time management and excessive pressing of the snooze button it is the meal to which I pay the least attention. Usually breakfast is peanut butter toast and a handful of berries as I rush out the door.

Yesterday though, I decided to give myself an extra few minutes and try a recipe I have heard rumblings about through the grapevine. There are multiple variations of the recipe to try. Some had yogurt (gag) and added nuts or chocolate syrup, etc. Below is the actual recipe I used the other day, minus all the frills that are associated, with you know…planning. Feel free to expand and experiment. If you are feeling healthy, go clean. If not, add some chocolate syrup and tell yourself it still counts as healthy because there is fruit. And, whatever – you have the whole day to burn it off anyway. Ignorance is bliss, my sugar loving friends. Enjoy!

Breakfast Banana Split

Ingredients
cottage cheese
banana
strawberries, blueberries, blackberries (I made my selection based on what was the lowest priced at the store which is why there are only blueberries and a lone strawberry in the picture)
Kashi Go Lean Toasted Berry Crumble (Despite being a “healthy” cereal, it basically tastes like candy so go easy, health conscious peeps)

Instructions
On a small bowl or plate, spoon a serving size of cottage cheese.

Flank this pile of fromage goodness with banana slices. I didn’t use any fancy implements to cut the banana. Mimic your evolutionary ancestors and use your hands!

Sprinkle the cereal, or granola if you wear Birkenstocks ;), on the cottage cheese.

Add berries (and other sundries such as nuts and chocolate sauce if you like) .

Enjoy!
